Product Details
Aromas and flavors of strawberry, ripe pear, and apple. Lees contact creates complexity and intense aromatics. Skin contact lends a copper color. Certified Biodynamic by Demeter.
This "Pet-Nat" follows the Ancestral Method, and is bottled without added sugar or yeast. Fermentation is paused mid-way for bottling, allowing the fermentation process to finish in the bottle with no disgorgement or dosage.
