California offers a wide range of prized growing conditions within its boundaries and ascending slopes of the Sierra Nevada. There are also many soil types comprised of sand, clay, loam, granite, volcanic ash, seabed soil and river-run gravel. We carefully select our Chardonnay grapes from multiple microclimates throughout the state: cooler areas produce flavors of crisp apple and lemon, moderate areas show flavors of ripe melon and stone fruit, and warmer areas add touches of tropical fruit.
Once our Chardonnay grapes are at the point of perfect tension between ripe fruit and bright acidity, they are picked in the early morning and arrive at the winery still cold. The grapes go directly to the press and the juice is sent to settle in chilled stainless steel tanks. We control the temperature during 3 to 4 weeks of fermentation, which allows us to maximize the varietal expression and preserve aroma. We use both lees stirring and malolactic conversion to enhance portions of the blends. Balanced with 10% new French oak.
