The Palmento Costanzo Etna Bianco Mofete appears a medium straw yellow color in the glass with a fragrant bouquet rich of citrus fruit and mineral notes, with hints of Mediterranean herbs. It is vibrant, fresh and sapid on the palate.
Palmento Costanzo is located in Contrada Santo Spirito, in the village of Passopisciaro, on the north side of the volcano Etna. Palmento Costanzo also has vineyards in Contrada Feudo di Mezzo and Contrada Cavaliere. The Etneo wine-growing areas, identified as contrade (plural for Contrada), are circumscribed geographical areas that differ from each other in terms of microclimate, soil organicity, and exposure to the sun and winds.
70% Carricante, 30% Catarratto from up to 30 years old vines. Aged for 4 months in stainless steel tanks in contact with the fine lees and 2 months in the bottle.

Aromas of lemon, lime, yellow apple, pear, turf and crushed stone show on the nose of this wine. There's lots of lemon on the palate along with more fresh and cooked apples. Plenty of acid keeps it all bouncy. -D.C.
