The Domaine Val de Caire Coteaux d'Aix-en-Provence Blanc pours a bright gold-green color in the glass. The wine reveals a fascinating nose with notions of green pineapple, Gala apples, white flowers, and dried chamomile followed by notes of toasted cashews, acacia honey, and a hint of fresh garden spearmint. On the palate, the wine is concentrated, juicy, and fresh, with layered flavors that includes not quite cooked spiced pears, lemon zest, and marzipan, all seasoned with palpable, almost salty limestone minerality.

The vineyard covers 17 hectares in the communes of Rognes and Lambesc. Numerous small plots are often surrounded by pine forest and garrigue, imbuing the wines with their distinctive flavors. Some of the older plots, over 40 and 50 years old, are particularly carefully tended to preserve this heritage, which is tending to disappear in the area. The vineyard has been farmed organically since 2011.
