The densely planted 70-year-old vines are perched on east facing hillsides of limestone alternating with loam, underlain with complex clays and marl. The grapes are hand harvested and fermented in thermoregulated stainless steel, then matured in a mix of tank and new and used barrels for ten months before bottling.
