Founded in 1849, the brewery brand Azuma Rikishi was created after the second generation’s favorite sport; sumo. Taking inspiration from the formidable term rikishi whose kanji symbolizes “gentleman of strength,” the brand’s ethos is to sufficiently draw out the umami inherent in rice to create a hearty brew. In 1970, a nearby 800 meter deep cave that was dug out intended to become a tank-building facility during WWII was declassified and procured by Shimazaki Shuzo for sake storage.
