With a deep ruby core, the wines intensity leaps from the glass showing concentrated red fruits and spice. The palate is balanced, full and broad with lingering complexity of red berry compote with exotic spice and coffee overtones.
It pairs well with game dishes, roasted red meat, seasoned cheeses.
The 'appassimento' style refers to grapes which have been hand-picked and then dried out to concentrate the sugars - a process that is practised widely in the north-eastern regions of Italy. 30% of the grapes are hand-picked and placed in cases that will be stored for 4 weeks in a controlled temperature fruit chamber room. 70% of the grapes are picked over-ripe and fermented traditionally.
30% of the blend rests for 6 months in 25hl oak casks.
