The M. Chapoutier Crozes-Hermitage Sicamor appears a deep black hue with crimson tints in the glass. A concentrated nose with notes of spice (black pepper, cloves) and black fruit gums is followed by notes of blackberries and graphite. The attack is broad and meaty, the tannins velvety. The palate is deep yet still nice and light. On the finish, the ripe black fruit notes intermingle with those of cedar, concentrated juice and tapenade.
100% Syrah sourced from a blend of different terroirs. Coarse-grained stony granite (Tournon granite) on the western side of the Hermitage hill. Puddingstone on the eastern side of the Hermitage hill. Terrace of river alluvium in Les Chassis area.
Traditional vinification, destemmed grapes. Fermentation lasts 10 days in rough concrete tanks. Maceration lasts 4 to 5 weeks.
The wine goes into barrel warm. The barrels used are demi-muids previously used for 4-5 fills. It spends 12 months in barrel, then 6 months in concrete tank to further hone the structure.
