Rich and complex on the nose with notes of blackberry, dark chocolate, vanilla, coffee and sweet burnt toffee. Bourbon barrel aging imparts flavors of vanilla, brown spice and caramel, which blend harmoniously with flavors of ripe plum, cranberry and hints of barbequed meats. Tannins are rustic and robust.

California offers a wide range of prized growing conditions within its boundaries and ascending slopes of the Sierra Nevadas. There are also many soil types comprised of sand, clay, loam, granite, volcanic ash, seabed soil and river-run gravel. We carefully source our Cabernet grapes from around the state in order to craft a wine that is ripe, smooth and representative of a classic California Cabernet.
Our Cabernet is picked at the peak of flavor development. The grapes are crushed and cold-soaked for 24 to 48 hours. During the 10 to 15 days of fermentation, the cap is pumped-over to enhance and guide the maceration process, maximize extraction, and allow the juice to capture the flavor, color and tannin from the grape skins. The wine then goes through malolactic conversion, softening natural acids and enhancing the mouthfeel. The wine is aged for 3 months in recently emptied bourbon barrels sourced from Redemption and Bib & Tucker.
