First, use a large, well-shaped glass—this limpid, soft yellow-gold Bourgogne Blanc comes entirely from vineyards in Meursault, after all—and is another textbook example of how fine wine evolves over time after it’s poured. The honeyed Chardonnay nose unfurls in the foreground with aromas of poached pears, ripe white peaches, Marcona almonds, and citrus blossoms, adding aromatic suggestions of honeycomb, toasted challah, and green herbs as the nose develops over time. On the palate, the wine is impressively concentrated and delicately textured—with focused flavors that echo the beautiful stone-fruit nose, palpable, sea-spray minerality, and a persistent, sweet-spice-and-pepper finish.
