The Coffele Recioto di Soave Classico Le Sponde appears an intense, golden yellow color in the glass. The wine shows a wide, rich range of aromas, from persimmon, dried fig, apricot, papaya, and candied citrus, to caramel, freshly ground coffee, and clear notes of dried Garganega skin. On the palate, it is sweet, well balanced by lively acidity, and has a very long finish.
For those with a sweet tooth, a cake makes an excellent pairing, especially one with dried fruits such as apricots (pan di Spagna alle albicocche). Alternatively, the Recioto makes an outstanding foil for a savoury blue cheese such as Stilton, Roquefort, or - for a regionally authentic pairing - Monte Veronese, topped with a little honey.

The organic Coffele 2019 Recioto di Soave Classico Le Sponde (packaged in a 500-milliliter bottle) opens to a dark gold, almost copper-like appearance. This is a thick and viscous dessert wine with a gorgeous bouquet. There are competing aromas of candied peach, honey, acacia flower and apple cobbler. The wine moves slowly in the glass due to its glycerin-heavy texture. It is a dessert in itself—and a very delicious one at that. Some 8,000 bottles were produced. Anticipated Maturity: 2022-2030
