Product Details
Shows an intriguing profile of blackberries, blueberries, dried plums and figs, a good balance with a velvety structure and a persistent finish.
The fermentation is carried out with destemmed whole berries, native yeasts, temperature control (not to exceed 28-30°C), a soft extraction and a long maceration period to obtain smooth tannins and a firm structure. After 30 days of maceration in average, the wine is aged for 12 months is new barrel (10%) , used barrels and Flexcubes.
This journey started in 2013; after years of crafting wines in Chile and in different corners of the planet, Ximena decided to make a big life change and begin a new and personal wine. The aim for this new project was to craft wines with a strong sense of place, where terroir is the main ingredient. Lolol is an ideal and unique location, a small valley surrounded by granite hills that influence the soil where these vines grow. With the cooling breezes from the ocean and the mountains, the vineyard is refreshed, thus allowing the grapes to slowly ripen and express a beautiful floral character in the wine. The purpose was and still remains today, to bring to life wines that evoke all the passion of the project: the expression and interpretation of a unique vineyard‘s personality. With minimal intervention, the aim is to interpret and express Lolol the best possible way.
