The Onyx has a lustrous and crystal clear lemon yellow hue and boasts rich aromas of yellow citrus fruit, melon and vanilla on the nose with a remarkable balance between tropical and citrus fruit. The palate reveals a wide, rich body with fabulous complexity that can be traced back to fruit quality and oak barrel influence. The wine demonstrates an excellent balance between fruit intensity and barrel flavors, with refreshing citrus serving as a springboard to a long, rich and round finish. The Onyx is ready to drink from its release date, but with proper storage conditions, it will continue to develop flavor and aroma for three to five years from its vintage date.
The Onyx is a superb accompaniment for intricate seafood dishes such as fish stew with tomato, thyme and ouzo, southern French bouillabaisse soup or grilled salmon with mustard and cream. It is equally great with light meats such as veal escalope in Marsala wine or roast quail with fresh grapes and mushrooms.
