Dry, quite warm and soft. Particularly fresh and savory, very mineral with elegant citrus and dried fruit flavors, dates, apricot jam, with hints of green vegetal essences; of remarkable persistence and pleasantness, able to evolve positively over time.
Excellent as an aperitif and with first courses, excellent with fish especially raw.
100% organic Pecorino aged for 4 months in steel and 2 months in bottle.
