The StoneCap Cabernet Sauvignon shows lovely aromas of fresh red cherry and red currant with notes of mocha and spice accented by hints of fresh herbs. The palateis intense and juicy showing red fruit flavors supported and focused by a fine structure and a hint of underlying minerality. The finish is lively and fresh and satisfying.
79% Cabernet Sauvignon, 21% Merlot, estate grown. During fermentation, the wine was pumped over twice daily until a balance of color, structure, andflavor extraction had been achieved. Malolactic fermentation was completed on oak, smoothing and softening the wine. The final blend was created as an authentic expression of the Estate’s Cabernet Sauvignon and the depth that can be found in Washington wines.
