Produced in the Yonne department, precisely in the greater Auxerrois, Coteaux Bourguignons is a recent regional appellation. It may be produced throughout Burgundy. This wine is a blend of Pinot Noir and Gamay Noir with white juice. The proportion is a minimum of a third of pinot noir and
maximum two thirds of gamay (predilection and spicy grape variety of Beaujolais).
This vintage, from vines located in the town of Saint Bris le Vineux, planted with pinot noir and gamay, is harvested manually, destemmed totally. The grapes ferment for around eight days in stainless steel vats, punching down and pumping over punctuate the maceration. Aging is carried out in vats stainless steel for a year, after malolactic fermentation, the wine is drawn off, then filtered with kielselghur, in order to be bottled.
This Coteaux Bourguignons has notes of red fruits and spices, mainly gray pepper. Its aging in stainless steel vats favors this delicate scent.
This wine goes wonderfully with meats in sauce, game and cheeses.
