Hints of minerality, lemon and citrus on the nose. An extremely lively palate of aroma that revolves around the classic acidity of Assyrtiko with a bit of freshness. A vinification full of clarity and purity that includes the fantastic lemony dimension of the variety.
Moinoterra’s philosophy is to cultivate only the native varieties of Crete, but we couldn’t resist the challenge of working with the top Greek variety coming from the unique terroir of Archanes . It is a single wine yard wine from terroir “Prokopis” north of Juchta, the mountain that delimits the PDO zone of Archanes.
Whole grape pressing, fermentation at higher temperatures of 16-18 C. Aging for 8 months on lees, a portion of the wine was vinified in 350lt oak barrels and improved the complexity of the wine.
