This Calvados from Lemorton is distilled from 70% pears and 30% apples in a wood-fired column still (the Domfrontais Appellation in southern Calvados has soil and climate more conducive to pear trees than apple trees, and Domfrontais Calvados must be at least 30% pear). This results in a lighter, more elegant spirit than other types of Calvados. The nose has scents of caramel apple, tart pear, and brown sugar / cinnamon. Sipping brings flavors of sweet apple, tart pear, light citrus, and a bit of toffee. A unique, delicious take on Calvados.
