California offers a wide range of prized growing conditions within its boundaries and ascending slopes of the Sierra Nevada. There are also many soil types comprised of sand, clay, loam, granite, volcanic ash, seabed soil and river-run gravel.
Our grapes are harvested at optimal ripeness and sent directly to the winery. Clusters are destemmed and the berries are sent to stainless steel tanks to ferment for 10 to 14 days, at which point we use temperature and pump-overs to extract flavor, color, and tannin. Once the alcoholic fermentation is complete, the wine goes through malolactic conversion to soften the natural acids and enhance the mouthfeel. Balanced with 10% new French oak.
