The nose shows intoxicating aromas of bright cherries, raspberries and toasty oak while initial flavors of dark cherry and vanilla bean give way to classic secondary notes of earth, warm spice, and well-integrated tannins. An intense Pinot Noir with a long finish.
Pair this medium-bodied wine with medium-bodied dishes, highlight the earthiness by pairing with roasted vegetables and mushrooms, or enjoy with poultry like roasted turkey or duck.
Running three hundred miles in length and extending inland off the Pacific Ocean, proximity to the coast is a major factor in the Central Coast. Combined with its inland warmth, it is easy to see this region’s ability to cultivate a wide range of high quality grapes. Weather aside, the geography is also varied and unique. Complex soils and transverse mountain ranges add to the allure of this region’s growing areas.
Once our Pinot Noir grapes have reached optimal ripeness, they are harvested in the cool of the early morning and then sent directly to stainless steel tanks to begin a gentle extraction during a 4 to 5 day cold soak. At this point, the alcoholic fermentation begins and during the next 7 to 10 days, we use careful control of temperate and cap management to continue beneficial extraction of flavor, color and tannin. Finally, the wine completes malolactic conversion and is aged to preserve the freshness and fruit of the vineyards.
