Rare by nature of its specific location, This Manzanilla is characterized by bright acidity, brilliant clarity, hints of green apple and a distinctive salinity.
The Bodega was founded in 1792 and is owned and operated by the 8th generation. It has held a preeminent position in Sanlúcar since the 19th Century. The house manages 200 hectares of vines, all farmed organically. Most of them are located in the Pagos of Miraflores and Balbaina. The flagship wine, Manzanilla ‘La Gitana’ (The Gypsy Woman) is named after a woman who owned a bar near the docks. The wines have received numerous awards, both nationally and internationally.
Manzanilla «La Gitana» is made from Palomino Fino grapes that are carefully cultivated in white albaniza soils, (+80% Calcium carbonate) very precious in order to obtain very fine and high quality musts. The grapes come from the Finca "El Cuadarado" located in the historic Balbaina Alta estate. It is considered one of the payments with the greatest altalic influence of all the payments of Jerez Superior.
The Must that is obtained from this farm has perfect characteristics for raising Manzanilla and from there comes a large part of its peculiar salinity. The wines enter our soleras that date from 1792 and are three years in the Bodega de San Fermin in the lower neighborhood of Sanlucar where the exposure to the river is direct. (300 meters from the shore) After three years they go to our main winery in San Fermin for another two -three more years, where they finish refining and polishing in the fat barrels that date from the beginning of the construction of the winery and that they have never been moved from their original site.
During all this time (5-6 years) the wines have gone through the Criaderas and Soleras system, always under the continuous care of the Flor veil that makes this wine a miracle and protects it from oxidation.
