The Dopff Au Moulin Cremant d'Alsace Brut Cuvee Julien appears a very pale gold color in the glass with light reflections and a fine column of bubbles. Fresh and elegant on the palate with a discreet floral tip, dry, a generous note on the palate, all the finesse of Pinot Blanc and the body of Pinot Auxerrois optimized by the Traditional Method.
A refined aperitif, it will elegantly accompany fish terrines. In Alsace, it goes wonderfully with royal sauerkraut.
The Dopff Family has always preferred to give some dosage to the BRUT (around 6 g) in order to let the wine express itself and give that unrivalled tasting pleasure. This is made possible as only the first pressing (Cuvee) is being used for the making of Dopff Cremants. At last, longer maturation times on the lees reduce the level of acidity and provide perfect bubbles.
As a pioneer of Crémant d'Alsace, our cuvées rest patiently for 24 months "on latte" for greater complexity and for greater finesse of bubbles.
