Product Details
Manual harvest with sorting in the vineyard and then in the cellar. Cold pre-fermentation maceration for 3 days. Alcoholic fermentation with very little extraction and long vatting. Gentle pressing and reinstatement of the presses with dripping wines according to tasting. Malolactic fermentation in barrels or in thermo-regulated stainless steel vats. Aged for 14-16 months: aged in exceptional oak barrels of one wine (minimal impact of the wood) and a few demi-muids (600L)
