Under its fairly light color, pale gold or green gold, this white expresses a very fresh, lively and mineral nose; we find flint, green apple, lemon. Notes of linden, mint and acacia are common, as are aromas of liquorice and cut hay. Very dry and perfectly fine, Chablis has a unique and very recognizable personality.
It can be enjoyed young (2-3 years) with fish or poultry terrines as well as grilled or poached fish. It will also keep for up to 7/8 years, with age making it more golden and spicy.
Vinification and aging in stainless steel vats in order to preserve all the typicity and freshness characteristic of Chardonnay. All operations from harvesting to bottling are carried out by us in our cellar (alcoholic and malolactic fermentation, fining, filtration, refrigeration).
