The Bollinger Champagne Brut Special Cuvee appears a golden color in the glass, distinctive of black grape varieties with very fine bubbles.  The wine has a beautiful aromatic complexity; ripe fruit and spicy aromas; hints of roasted apples, apple compote and peaches.  On the palate, a subtle combination of structure, length and vivacity; bubbles like velvet; pear, brioche and spicy aromas, notes of fresh walnut.

Pair with Any fish, especially sushi and sashimi. Seafood: shrimp, prawn, crayfish, grilled lobster. Poultry and white meat. Parmesan, good cured ham.

This focused Champagne shows lovely balance, with its satinlike mousse and well-honed acidity enmeshed with flavors of white cherry, pureed raspberry, toast point and creamed almond.
