The final alcoholic fermentation occurs in French (70%) and American (30%) new oak barrels, with light toast. Aged with its lees for 18 months in the same oak barrels with the regular ?batonage?. Finally, all different batches are assembled. Aging was completed with a minimum stay of 9 months in bottle. Production limited to 48 barrels.
60% White Tempranillo comes from a recently planted vineyard located in La Rioja Alta, with an Atlantic microclimate influence and a controlled production of 5,000 kg/Ha. Harvest date: September 24th. 28% Viura from more than 30 years old vines, located in La Rioja Alta, with calcareous clayish soils and altitudes between 450 and 550 metres with Atlantic microclimates. Productivity: around 5,000 kg/Ha. Harvest date: September 23rd. 9% Maturana Blanca coming from an organically grown vineyard located in Hormilla (La Rioja Alta), planted in 2008. Altitude: 650 m. Stony poor soil. North-east orientation. Purely Atlantic microclimate. Production: 4000 Kg/Ha. Harvest date: September 24th. 2% Malvasia from very old vines, of more than 63 years, located in La Rioja Baja with very poor and rocky soils and a Mediterranean microclimate influence. South East Orientation and altiture of 310 metres. Its yielding was of only 3.000 kgs/ hectare. Harvest Date: September 10th
