Yogev Cabernet Sauvignon is best enjoyed just after its release, with its nose of red and black fruit underpinned by herbal notes. The palate is balanced and rich, with medium body and a balance of fruit and oak flavors that finish with a round and silky finish. Proper storage conditions can encourage further aging for a period of up to four or five years, but this wine is still most enjoyable while young. This balanced wine is superb paired with grilled meats and classic dishes such as potatoes au gratin with mushrooms or four cheese gnocchi, as well as with semi-hard cheeses made from cow's milk.
The grapes are harvested after nightfall. After destemming, the grapes are cold soaked and the alcoholic fermentation which lasts approximately one week followes. After a brief stabilization, part of the wine is aged in stainless steel tanks and the remainder is transferred to oak barrels for several months of aging to enhance the flavors and complexity.
