It goes very well with seafood and fish dishes, such as oysters and salmon, as well as grilled meat, sautéed vegetables or exotic dishes such as sushi. It pairs well with nuts, pastries or chocolate desserts.
Toto Barbadillo is a sparkling wine from Cadiz, which has been produced predominantly from Palomino grapes that have been grown in our white albariza soils. This is the third generation of sparkling wines to be produced by Barbadillo, and this particular collection has undergone the longest period of ageing out of all of Barbadillo’s sparkling wines. A very dry sparkling wine, which is surprisingly fresh on the palate, perhaps as a result of the very special soils in which the grapes are harvested in the Sherry Triangle.
