In the north of Burgundy, not far from Auxerre, the Chablis appellation stretches for about fifteen kilometers around the town of the same name. It is to the monks of the Cistercian abbey of Pontigny that we owe the cultivation of vines in this region. The vines are planted on rather low slopes (5 to 20%) with various exposures. The grapes that gave birth to this wine come from a mosaic of varied terroirs, which gives it a nice complexity.
